I was in Trader Joe’s and was intrigued by their freeze-dried strawberries! As a strawberry lover I had to make something out of it! So I took my favorite biscotti recipe and tweaked it and came out with this delicious biscotti!
1/2 cup sugar
1/2 cup brown sugar
1/2 cup oil
2 eggs
1 tsp vanilla
1/4 tsp baking soda
1/8 tsp salt
1 and 1/2 cups flour
1/2 cup white chocolate chips, plus more for melting
1 cup freeze dried strawberries
With a fork, mix oil and sugars. Add the rest of ingredients (excluding the strawberries and white chips) one by one and mix till fully incorporated.
Pulse the strawberries till you have small bits and finely ground pieces. Set aside the finely ground pieces for the topping.
Fold in slowly the strawberries and white choc chips in the mixture.
Form logs. And bake at 350F for 25 minutes till golden.
Remove from oven and let cool slightly. Cut into logs and melt white choc and drizzle slowly onto the logs. And sprinkle the strawberries on top.
Let cool completely and enjoy!
