Sunshine Kani Salad

Ingredients

Salad

  • 5 Kani sticks, chunked and pulled

  • 1 cucumber, cut into matchsticks

  • 1 mango, cubed

Dressing

  • 5 sprigs fresh parsley, cleaned and chopped

Directions

1.

Preheat oven to 350 degrees Fahrenheit.

2.

Toss sweet potato with salt and oil and roast for 15 minutes, or until golden.

3.

Combine dressing ingredients and mix well.

4.

Place salad components in a bowl and toss with dressing prior to serving.
