Stirring cashews into this delicious “stir-fry” adds the perfect crunch to this dish.
1 and 1/2 pounds chicken cutlets
3 peppers (assorted colors)
2 cups snow peas
1/3 cup unsalted cashews
2 tablespoons oil
pepper, to taste
1/4 cup Glicks Soy Sauce (use a wheat-free version for gluten-free)
1/4 cup water
1/4 cup sugar
2 tablespoons Gefen Honey
2 tablespoons Tuscanini Tomato Paste
1/4 cup Gefen Vinegar
Preheat oven to 375 degrees Fahrenheit.
Stir sauce ingredients together until smooth.
Arrange the chicken and vegetables on a lined baking sheet and toss with half of the sauce.
Bake for 20 minutes.
Toss the mixture with half of the remaining sauce and broil on high for five minutes.
Remove from oven and stir in cashews with the remaining sauce.
Top with sesame seeds and serve.
