Diets Different from the classic coffee cake which usually has crumbs and is usually a more dense cake, this coffee cake is light, airy, and tastes delicious. If you’re a coffee lover, this coffee cake is perfect with a nice warm cup of coffee. This makes a large amount of cake, and freezes very nicely.
12 eggs
3 cups sugar
1 tablespoon Gefen Vanilla Sugar
2 heaping tablespoons coffee, dissolved in 4 tablespoons hot water
1/2 cup oil
3 cups flour
3 teaspoons Haddar Baking Powder
Beat eggs until foamy.
Add sugars and beat until light and fluffy. Reduce speed, then fold in remaining ingredients.
Pour into lined 10- by 16-inch baking pan. Bake at 350 degrees Fahrenheit for one hour.

Tasty, but… This cake was had a good flavor, but it was dry. Maybe a full cup of oil or adding applesauce would help? If anyone has any ideas, please say!
