Easy dinners are my thing. With ingredients everyone has in their home. I had some cherry tomatoes on the verge of going bad, so I thought, what a good idea to make a sauce to go with salmon. Serve with some noodles or rice and it’s a meal you will make on repeat!
2 salmon fillets
salt
pepper
paprika
1 onion, diced
olive oil
2 cloves crushed garlic
1 cup cherry tomatoes, halved
salt, to taste
pepper, to taste
handful fresh basil
1 tablespoon balsamic vinegar
Season salmon with salt and pepper and paprika bake at 350 degrees Fahrenheit for 30 minutes.
Meanwhile make the sauce. Sauté an onion in olive oil for about five to 10 minutes.
Add garlic, cherry tomatoes, salt and pepper. Cook for 10 minutes, till the tomatoes start to get soft.
Add basil and balsamic vinegar and stir.
Serve the salmon with the tomatoes on top.
