Stay warm this winter with a hearty soup that is prepared in just minutes. You’ll be surprised that little kids love this soup too!
1 pound ground turkey (see note)
1 tablespoon Gefen Olive Oil
1 onion, chopped
2 carrots, peeled and sliced
1 teaspoon dried dill
1 teaspoon dried parsley
crack of pepper
1 teaspoon salt, more to taste
dash of celery seed (optional)
6 cups water or broth, such as Manischewitz Vegetable Broth
1/2 cup Gefen Pearl Barley
3/4 cup frozen chopped spinach
Heat the oil in a soup pot. Add in the ground turkey and make sure to break it up into very small pieces.
When it is cooked through, add in the onions and carrots. Sauté till the onions begin to soften a bit. Add in the spices and give a stir. Then add in the barley and water. Bring to a boil and simmer covered till the barley is soft. This should take about 40 minutes.
Once the barley is soft add in the chopped spinach and cook for another 10 minutes or so. If the liquid reduced a lot, add in more water, about one to two cups. Add more salt to taste if needed.
