Easy No Refined Sugar Meat

Contains: Gluten

Directions

  1. Heat the oil in a soup pot. Add in the ground turkey and make sure to break it up into very small pieces.

  2. When it is cooked through, add in the onions and carrots. Sauté till the onions begin to soften a bit. Add in the spices and give a stir. Then add in the barley and water. Bring to a boil and simmer covered till the barley is soft. This should take about 40 minutes.

  3. Once the barley is soft add in the chopped spinach and cook for another 10 minutes or so. If the liquid reduced a lot, add in more water, about one to two cups. Add more salt to taste if needed.

Notes:
Not a fan of ground turkey? Use a turkey leg instead! This will require a longer cook time. Once soft, remove the turkey and shred the meat off the bone, then return the meat to the soup pot.
