Some nights just call for a really light dinner! Like when it’s scorching outside and we’re staying far away from the hot kitchen. This salad has protein and it’ll withstand the heat because it’s cabbage and not lettuce based. It can also be the perfect addition to any Shabbat meal. 1 (7-ounce) bag shredded red cabbage
1 (7-ounce) bag shredded green cabbage
5 scallions, sliced
1/4 pound smoked turkey, cubed
1/4 pound pastrami
1/2 cup Gefen Mayonnaise
3 tablespoons Gefen Lemon Juice
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon Pereg Dill or other dried dill
1 teaspoon dried parsley
1 tablespoon Gefen Honey
1/4 cup Gefen Almond (or soy) milk
In a bowl, combine cabbages and scallions.
Prepare the dressing. Combine mayonnaise, lemon juice, garlic, onion powder, salt, dill, parsley, honey, and almond milk in a container. Shake well.
Pour the dressing over the cabbage and scallions. Toss to combine.
Top with the turkey cubes and sliced pastrami strips. Toss a bit to incorporate.
