This avocado-based mousse may sound strange, but once you try it, you’ll be hooked. The avocado flavor mellows over time, so plan ahead and make this the day before serving.
3 large ripe avocados
1/2 cup cocoa powder
1/2 cup Gefen Unsweetened Coconut Milk
1/2 cup Gefen Maple Syrup
3 teaspoons vanilla extract
1/2 teaspoon kosher salt
2 tablespoons chocolate chips (optional)
In a food processor fitted with the S blade, process all ingredients until smooth, scraping down the sides of the bowl halfway through. If using chocolate chips, add now and process for a few seconds to add a crunchy texture.
Mousse can be served immediately, but refrigerate for at least four hours for optimal flavor and texture. Serve in individual cups.
Top with berries and whipped cream if desired.
