Diets This vegetable soup is a total meal-in-one. Beans, split peas, root vegetables, and noodles make this soup a hearty and filling supper.
1/2 cup green split peas
1/2 cup Gefen Yellow Split Peas
1 and 1/2 tablespoons salt
1/4 cup pea beans
1/4 cup barley, such as Glicks Pearl Barley
4 quarts water
1 medium onion, diced
4 tablespoons oil
3 carrots, diced
2 stalks celery, diced
1/2 parsley root, diced
1 cup small square or Manischewitz Bow Tie noodles
Place first six ingredients into an eight-quart pot and cook for one and a half hours.
In separate pot, sauté vegetables in oil for 30-40 minutes.
Combine sautéed vegetables with beans. Cook for half an hour.
Add noodles and cook for five minutes. Turn off heat and keep covered for 10 additional minutes.
