Diets You gotta try this variation of your basic potato latkes, a veggie latke!
2 medium potatoes
2 carrots
1 zucchini
1 onion
2 eggs
1/3 cup oil (plus more for frying)
1/2 cup flour (I used oat)
2 teaspoons salt
1 tablespoon onion soup mix
Shred your vegetables and place into a large bowl.
Add the rest of the ingredients into the bowl with the shredded vegetables and mix everything together.
Pour about one inch of oil into a skillet and fry your latkes on medium to high heat for five minutes, flipping halfway through.
