Diets 8 ounces orzo such as Gefen Whole Wheat Orzo
1 tablespoon oil
1 teaspoon salt
1 medium onion, diced
3 carrots, sliced
1 red pepper, diced
8 ounces broccoli, chopped
8 ounces cauliflower, chopped
Bring 2 quarts of water to a boil. Add oil, salt and orzo.
Cook for 10 minutes. (To avoid sticky orzo, add cold water to cooked orzo, pour onto sieve and rinse in more cold water.) Set aside.
Sautee onion in oil until golden brown.
Add carrots and pepper. Cook for 15-20 minutes.
Add broccoli and cauliflower. Cook for additional 10 minutes.
Combine cooked vegetables with orzo. Serve warm with meat or fish.
