10 medium sized russet or red potatoes
2 large onions
1 cup olive oil
1 tablespoon salt
1/2 tablespoon pepper
2 eggs
Wash and peel potatoes. Then peel the onions and cut the top off.
Cut the potatoes and onions into chunks (each potato/ onion should make about four chunks). Use a food processor to shred onions and potatoes.
Put the potatoes and onions into a large bowl and mix well. Add in salt, pepper, oil, and eggs. Mix until combined.
Pour into waffle iron and cook until brown.
Top with applesauce and enjoy!!!
