Healthy , Low fat and kids (and adults) gobble them up!
1 fat free cottage cheese (16 oz.)
3 eggs (can use 2 whole eggs and 2 egg whites)
1/3 cup sugar
2 tablespoons Gefen Vanilla Sugar
2-3 tablespoons fat free milk
Mix cottage cheese, flour, eggs, both sugars until well combined. Mixture will be a bit dry, Add milk a tablespoon at a time to loosen up batter.
Spray a frying pan with non stick spray . Over medium heat drop batter by large tablespoonfulls and fry until nicely browned. Flip and fry the other side.
Yields 18 latkes
