The perfect Chanukah treat for kids — mini chocolate-cheese latkes. So easy to make and gluten free too!
Makes 20 small latkes
1 cup (250 grams) ricotta cheese OR quark cheese
1/3 cup sugar
1 egg
1 teaspoon vanilla extract
pinch of salt
5 tablespoons cornstarch
3 and 1/2 ounces (100 grams) Elite Milk Chocolate, chopped into small pieces (or bittersweet or white chocolate)
3 and 1/2 ounces (100 grams) Elite Bittersweet Chocolate, broken into squares
1/2 cup (125 milliliters) heavy cream
Confectioners’ sugar
In a bowl, mix together cheese, sugar, egg, vanilla, salt, and cornstarch until smooth. Mix in chocolate pieces while stirring.
Heat oil in a frying pan. Add batter by the spoonful (keep the latkes small) and fry until golden on both sides.
Remove from pan and drain on paper towels.
Place chocolate in a bowl. Add cream and melt together in microwave or a double boiler until completely melted and smooth.
Serve with latkes.
