This fruity salad with wild rice is easy to prepare in advance, perfect for Shabbos meals. Prepare it with your choice of dressing.

Prepare the Wild Rice Fruit Salad

  1. Combine rice and water in a three-quart saucepan and bring to a boil.

  2. Reduce heat and cook, covered, for 45 minutes. Let stand for one hour. Fluff rice with fork, then cover tightly and let stand for five minutes. Drain any excess water. Allow to cool.

  3. Combine rice with remaining salad ingredients

  4. Combine ingredients for either dressing and pour over salad. Serve over bed of lettuce.

Variation:

Add 2 cups cooked chick peas
