Olive Oil Honey Cake

Looking for a different take on honey cake for Rosh Hashanah this year? Try this amazingly light recipe for lemon-flavored olive oil honey cake. It checks all the boxes!

Olive Oil Honey Cake
 2 eggs
 1 and 1/2 cups sugar
 1/2 cup olive oil
 1/4 cup honey
 1/4 cup orange juice
 1 tablespoon instant coffee granules dissolved in 1 tablespoon hot water
 2 teaspoons Gefen Vanilla
 1/4 cup Heaven & Earth Lemon Juice
 zest of 2 lemons (optional, but recommended)
 2 cups flour
 2 teaspoons baking powder
