Using a favorite family recipe, Melanie and Diana whip up a thick and totally flourless (!) cake batter. This gluten-free cake is rich and chocolatey, topped with a perfectly smooth ganache frosting.

1 cup bittersweet or semisweet chocolate chips
½ cup unsalted butter or margarine
¾ cup granulated sugar
¼ tsp salt
½ tsp instant espresso (optional)
1 tsp vanilla extract
3 large eggs (slightly beaten)
½ cup sifted dutch process cocoa powder
