Sunny Side Up Pretzel Boats

Next time you make breakfast in bed for someone, make it spectacular with these pretzel roll-filled sunny side up boats. They take minutes to make and they please every time!

 8 pretzel rolls (or hard bread rolls of your choice)
 1 small onion, diced finely
 salt and pepper, to taste
 4 teaspoons butter
 8 eggs
 2 tablespoons plus 2 teaspoons parmesan cheese, for sprinkling
