Add chicken to a ziplock bag. Add all marinade ingredients. Mix around to coat well. You can either continue right away or marinate in the refrigerator, up to overnight.
Preheat oven to 350 degrees Fahrenheit.
Add chicken to a baking pan. Do not throw out the marinade. Add veggies in different places throughout the pan. Pour marinade over everything.
Cover and bake for 40 minutes. Uncover, add tomatoes on top, and bake another 20 minutes.

Delicious easy recipe! This will definitely be made on repeat. I did cook it longer covered (bc we like it soft like that) and bc of all of the liquid it stayed so juicy! The vegetables especially the tomatoes were so yummy! It was a real hit!
very yummy and easy I didnt even include the vegetables and everyone loved it The marinating the night before made it tastier
Literally my new go-to chickne for Friday night. I had guests and everyone was raving about the chicken, which has never happened before with chicken on the bone (I mean, it's literally the most boring cut ever!)
One guy took two pieces which was saying something because there was a lot of food!
I added in some crushed garlic to the marinade
