I don’t bake. Really, I don’t. Instead, I raid my daughter’s freezer (with permission!).
I had some of these muffins over Succos, and they were just yum!

She baked a double batch to give me precise instructions for the recipe and had to hide one for me to taste before they were all gone. Yes, they’re that good!

Yields 25 muffins

40m 12
Easy Vegetarian Pescatarian Parve Freezer-Friendly

Contains: Gluten, Wheat, Egg

Directions

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).

  2. Mix all ingredients with a hand blender or fork. Pour into a muffin pan. Bake for 15–20 minutes, or until light brown. Enjoy!

My husband could not get enough! 24 muffins made for Shabbat are now only two left. These are by far the best muffins I’ve ever made!
