Prepare the Potato Dish
Line a four to six-quart slow cooker with a liner bag or spray with cooking spray. In a large bowl, toss potato slices, olive oil, and onion soup mix. Layer potato slices on the bottom of the slow cooker.
Now place all your vegetables in the large bowl and toss with olive oil, vinegar, soup mix, and seasonings. Pour mixture over scalloped potato layer.
For the fabulous meat option: Top with beef jerky (the meat softens and adds a nice smoky flavor to this dish).
Cook on low for six hours, or on high for three hours.

Baked? How would I make this in the oven? Baked on 250? Please advise
I convert crock pot recipes to oven overnight cooking all the time. I would do it on 200 overnight. Or 250 for six hours. Check it in between to see how it's coming along if doing the second option.
Substitute for ranch dressing packet? I don't like to generally use such items, what are some ingredients I can substitute for the ranch dressing?
Rivky says that if you don't want to use a packet of flavoring or a prepared dressing you may substitute by just preparing a homemade dressing or mixing together different spices to achieve a similar effect.
