Super moist and fluffy, this apple cake is chock-full of apple chunks in every bite! This is the perfect Rosh Hashanah apple cake, or great for when you come home with lots of apples from an apple picking trip! This light and airy apple cake won’t disappoint!
6 eggs
1 cup sugar
3/4 cup oil
pinch of salt
1 tablespoon Gefen Vanilla Sugar or 1 teaspoon vanilla extract
1/2 teaspoon Gefen Cinnamon
juice of 1 lemon
2 cups flour
1 teaspoon Haddar Baking Powder
4 pounds apples, peeled and diced
Beat eggs and sugar until light and fluffy.
Add oil, salt, vanilla, cinnamon, lemon and mix well.
Add flour and baking powder. Add apples and mix by hand.
Pour into lined 10 x 16 inch pan and bake at 350 degrees Fahrenheit for one hour.
