6 medium Granny Smith apples
5 tablespoons Alfasi Cabernet Sauvignon or other red wine
3/4 cup sugar
3 eggs
1/2 cup oil
1 cup flour
1 teaspoon Haddar Baking Powder
1 teaspoon cinnamon
1/2 cup walnuts
1/2 cup golden raisins
confectioners’ sugar, for sprinkling
Preheat oven to 350°F (180°C).
Peel and cube the apples. Place in a medium-size bowl with the wine and sugar. Mix and let stand for half an hour.
In a separate bowl, combine remaining ingredients, except confectioners’ sugar.
Add the apples, including the liquid, to the mixture.
Mix gently and pour into a greased loaf pan. Bake for about 40 minutes, or until cake is golden.
Sprinkle with confectioners’ sugar.

I followed the recipe and checked it twice (or five times), but my cake didn’t come out like the picture. How big are the cubes of apple supposed to be? Are the nuts supposed to be 1/2 cup of walnut halves, or 1/2 cup chopped? There seemed to be an excess of liquid ingredients, and not much flour. The cake was very wet and heavy, and the apples didn’t cook, even after leaving in the oven for at least an extra 20 minutes. It was more like apple kugel than cake. Where did I go wrong?
