Diets The softest, most cloud-like cookie you’ll ever eat! Seriously, these cookies are so blissfully soft-no, not chewy-soft and airy! Cinnamon, ginger, and green apple bits cut the sweetness down for the perfect bite, melding the sweetness, spice, and tartness together in the most harmonious of ways.
3/4 cup packed brown sugar
1/2 cup sugar
pinch of sea salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon baking soda
1 stick salted butter
1 egg
1 teaspoon vanilla
1 and 1/2 cups gluten-free flour
1 green apple
Preheat the oven to 350 degrees Fahrenheit.
Mix the dry ingredients with softened (not melted) butter.
Add vanilla.
Add the egg and mix.
Wash, peel, core, and finely chop the apple into small pieces and mix into the cookie dough.
Put your bowl of cookie dough in the freezer for a half hour.
Line your baking pans/sheets with parchment paper.
Roll the dough into one-inch balls, and place on the baking pan/sheet.
Bake in the oven for about eight minutes, or until just starting to turn golden brown.
Set down to cool, and repeat until all is baked.
