Chocolate Chip Cinnamon Sugar Spelt Cookies

  • 1 cup sprouted spelt flour

  • 3/4 cup coconut sugar

  • 2 tablespoons ground flax meal

  • 1/2 teaspoon baking soda

  • 2 tablespoons ground cinnamon

  • 1/2 teaspoon kosher salt

Directions

For the Cookies

1.

Preheat oven to 350 degrees Fahrenheit and grease a Gefen Parchment Paper.

Whisk all dry ingredients well, and then add wet ingredients. Slowly fold in the chocolate chips at the end.

3.

From the cookie dough mixture, form tablespoon-sized balls and drop them onto the parchment paper.

4.

Bake for 20 minutes on oven’s middle rack until firm.

Variation:

If you prefer, you can substitute an egg for the ground flax meal and carob chips for chocolate.
