What’s a salad that tastes delicious and can be made in advance? Try my gluten-free, delicious pasta salad at your next special occasion. I love to make this salad for others for a Shalosh Seudos or a Bar Mitzvah. It’s so easy to toss it all together and keep in a container in the fridge. The more the pasta sits in the dressing, the yummier it gets!
1/2 pint grape tomatoes, halved
a bunch of checked Tuscan kale, torn
mozzarella slices or mini balls (optional; can be omitted for a parve salad)
alfalfa sprouts, for topping
1/4 cup Tonnelli Avocado Oil
1/4 cup balsamic vinegar
1 teaspoon toasted sesame oil
1 cube Gefen Ginger
1 cube Gefen Garlic
5 cubes Gefen Basil
1 tablespoon lemon juice or 1/2 a fresh lemon, squeezed
2 tablespoons silan, such as Heaven & Earth Date Syrup
salt
pepper
Cook the pasta till al dente according to package directions. Drain and rinse.
In a small container, add all the dressing ingredients and shake until combined.
Toss pasta with the dressing and add the sliced tomatoes, kale, and mozzarella cheese. Serve room temperature and top with kale.
