Very healthy bean soup with few points on Weight Watchers.
1/2 cup of white beans, washed well
1 can chick peas, washed and drained
1/4 cup lentils, must wash well
2 celery stalks, chopped
dash salt and pepper
3 fresh tomatoes, cut small
1 teaspoon avocado or grapeseed oil
4 minced fresh garlic
1 onion, diced small
2 carrots, diced
1 yellow zucchini, diced (with skin)
First sauté onion and garlic for a minute, then add vegetables and ingredients and spices. Let cook all together, then fill pot with water and let it cook for a good hour.
Optional, not on WW, I add vermicelli pasta toward the very end.
