This delicious side dish is fun to put together and even yummier to eat! You will want this on your menu for Pesach!
Yields approximately 48 potato nests
10 ounces Gefen Instant Mashed Potatoes
1/4 cup oil, such as Gefen Cottonseed Oil
3 tablespoons Gefen Mayonnaise
2 teaspoons salt
1 teaspoon black pepper
2 cloves garlic minced or 2 cubes Gefen Frozen Garlic (optional)
chopped parsley (optional)
1 onion, diced small
approximately 1 and 1/2 pounds ground beef
3 tablespoons Tuscanini Tomato Paste
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika, plus more for garnish
Cook the mashed potatoes according to package directions.
Add the rest of the ingredients. Mix well and set aside.
In a pan heat the oil. Add the onions, sauté until they are starting to brown, approximately five to seven minutes.
Add the beef and brown it. Add the spices and tomato paste, making sure everything is well incorporated.
Spray or oil muffin tins very well.
Press some potato mixture into the bottom of the muffin tin, add approximately three teaspoons beef mixture then top with more potato, repeat until all the potato and meat is used up.
Sprinkle some paprika on top for garnish. Bake at 350 degrees Fahrenheit for 20 minutes.
Pop the potato nests out of the muffin tins AFTER they have fully cooled in the fridge overnight. Enjoy!

I was out of chopped meatso I filled with sautéed deli and it was a hit!
does this recipe freeze?
Yes, just make sure to freeze them one layer or with parchment paper in between so they don’t stick to each other.
