These corn tortillas rolled up with delicious spiced ground beef were a home-run dinner that was enjoyed by my whole family.
Yield: 12–14 tortillas
1 and 1/2 teaspoons oil, plus more for coating
1 onion, chopped
1 teaspoon chopped garlic or 1 cube Gefen Frozen Garlic
1 pound ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon chili powder
3/4 teaspoon salt, plus more for sprinkling
1/2 teaspoon black pepper
3/4 teaspoon Pereg Cumin
1/4 teaspoon oregano
12 6-inch corn tortillas
sliced avocado, for garnish (optional)
guacamole, for garnish (optional)
Glicks Hot Sauce, for garnish (optional)
salsa, for garnish (optional)
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
Heat oil in a skillet over medium heat. Add onions and sauté until soft and translucent.
Add chopped garlic and sauté until fragrant.
Add the ground beef and cook until no longer pink. While cooking, use a spatula or spoon to break up meat into small pieces.
Add spices. Stir meat until spices are well incorporated and set aside.
Warm one to two tortillas in the microwave for 10 seconds or until soft and bendable.
Lay tortilla on a plate and fill with two to three teaspoons of cooked ground beef. Place the meat toward the left side of the tortilla.
Roll the tortilla tightly and place seam-side down on the parchment-lined tray. Repeat with rest of the tortillas.
Brush each tortilla with oil and sprinkle some salt on top.
Bake in the oven for 15–20 minutes or until lightly crisp and crunchy.
Top with garnishes for serving, if desired.
