Ingredients

Banana Cake

  • 3 very ripe bananas, mashed

  • 1/2 cup oil

  • 1/2 cup granulated sugar (I used organic)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 and 1/2 cups flour (I used spelt)

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup big chocolate chips

  • optional: cinnamon and/or oats for sprinkling

Directions

1.

Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius).

Mash the bananas in a large bowl until mostly smooth.

3.

Add the rest of the ingredients and mix well.

4.

Fold in the chocolate chips.

5.

Pour the batter into the prepared loaf pan.

6.

Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

7.

Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Enjoy.
