Diets This banana cake is scrumptious. It can easily be customized according to your family’s liking. It also works great with spelt flour.
3 very ripe bananas, mashed
1/2 cup oil
1/2 cup granulated sugar (I used organic)
1 large egg
1 teaspoon vanilla extract
1 and 1/2 cups flour (I used spelt)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup big chocolate chips
optional: cinnamon and/or oats for sprinkling
Preheat your oven to 325 degrees Fahrenheit (160 degrees Celsius).
Mash the bananas in a large bowl until mostly smooth.
Add the rest of the ingredients and mix well.
Fold in the chocolate chips.
Pour the batter into the prepared loaf pan.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Enjoy.
