On those weeknights when I want to put a minimal-effort, family- favorite supper on the table, this is usually my go-to. Loved by every single member of my family, including my baby, I really can’t go wrong with these tuna patties. Leftovers (if there are any!) make a great lunch- on-the-go option that can be eaten at room temp.
Yield: 1 dozen
2 (7-ounce) pouches Gefen Albacore Tuna, drained
4 scallions, sliced
4 teaspoons Haddar Dijon Mustard
4 eggs, beaten
2 teaspoons Gefen Lemon Juice
1 teaspoon salt
1/2 teaspoon black pepper
1 and 1/2 cups Gefen Panko Crumbs
Gefen Olive Oil, for pan-frying
tartar sauce
sliced lemons
Line a baking sheet with Gefen Parchment Paper and set aside.
In a medium bowl, mix together tuna, scallions, mustard, eggs, lemon juice, salt, pepper, and panko.
Using a 1/4-cup measuring cup, form patties, flatten, and place on the prepared baking sheet.
Heat a nonstick frying pan over medium heat. Add enough olive oil to cover the bottom of the pan. Once hot, cook patties two to three minutes on each side, or until golden brown.
Transfer to a cooling rack. Serve hot with tartar sauce and sliced lemons.
