I’m so excited to bring you this super easy honey cake recipe hack for Rosh Hashanah, using a ready-made mix! It has everything you need in a honey cake. Warm spices, a moist, delicious texture, and -bonus!- less time in the kitchen! You can also use different shaped cake pans if bundts aren’t your thing. See the back of the cake mix box for baking times.
1 box Duncan Hines Spice Cake mix
3 eggs
1 cup water or cooled brewed coffee
1/3 cup oil
3/4 cup Gefen Honey
1 tablespoon melted margarine
1 and 1/2 to 3 tablespoons apple cider or apple juice
1 teaspoon apple pie spice
Preheat the oven to 350 degrees Fahrenheit.
Mix the ingredients together in the bowl of a mixer or by hand, until everything is incorporated.
Spray a bundt pan well with cooking spray and immediately transfer the batter to the pan. Bake for 30 to 35 minutes, until a toothpick inserted in the cake comes out clean.
Cool for 10 to 15 minutes, then loosen the edges with a knife. Invert onto a large plate or cake dome.
Cool completely before icing (see below).
Combine all the icing ingredients in a bowl. Start by adding in one and a half tablespoons of cider or juice and add up to three tablespoons as needed. Pour over the cooled cake.

This came out great. Lots of complements. I want to add something important. If you don’t have the spice cake mix, you can use yellow cake mix like I did. Just add the apple pie mix or cinnamon (3/4 t) and nutmeg (1/2 t) to the cake mix. Also, I highly recommend adding chopped walnuts.
Hi Gina,
These are some really good suggestions! Thanks so much for sharing your experience with us and helping other Kosher.com fans. Sounds absolutely delicious!

Where do you find Duncan Hines spice cake mix? I haven’t found it anywhere
I was able to find it on Amazon and Target.com. It may also be on Instacart. I hope you are able to find it and your honey cake comes out delicious! -Chana Tzirel from Kosher.com
See above…
Will this taste good without the icing?
It will taste good, a little less fancy ;). Either way it’s delicious! -Chana Tzirel from Kosher.com
What am I doing wrong? It comes out very liquidy and sinks in the middle. When I leave it in longer, it’s dried out. Please help! Many thanks.
That could be because the pan is too small! What size pan are you using?
I use a bundt pan. BTW, yesterday, although sunken in the middle, it came out perfectly and on time!
Make Ahead I’ve made this cake several times and I love it. I’ve never made it ahead of time and frozen it. I would like to try this year, but I am worried about the glaze holding up by freezing it. Would you recommend baking the cake and freezing it, leaving the glaze off. Then after thawing make and apply the glaze?
Thanks,
Gail
Hi Gail, yes exactly! I would recommend freezing without the glaze and adding it on last minute before serving!
AMAZING. Never going to make another honey cake recipe.
delicious!
Too easy an soooooo good! Doubled the recipe and made for the family .
How many small loaf pans would this make?
