This recipe might sound typical, but it’s really anything but. This is not your bubby’s tasteless diet veggie kugel!
16 ounces Beleaves Frozen Broccoli Florets
16 ounces Beleaves Frozen Cauliflower
1/2 (16-ounce) bag frozen spinach
6 eggs
1 cup non-dairy milk (I use unsweetened coconut milk, but you can use soy milk or Gefen Almond Milk or nondairy creamer)
1 and 1/2 teaspoons onion powder
1 and 1/2 teaspoons garlic powder
1/2 teaspoon mustard powder
pinch of cayenne pepper
salt, to taste
pepper, to taste
1/4 cup full-fat mayonnaise
Let broccoli and cauliflower defrost overnight in the fridge. Thaw spinach on the counter so it’s room temp.
Preheat oven to 375 degrees Fahrenheit and spray a 9×13-inch pan with cooking spray.
Place spinach in a mesh strainer and squeeze to remove as much liquid as possible.
Place broccoli, cauliflower, and drained spinach in a large bowl. Add parve milk, eggs, mayo, and spices, and mix very well until all ingredients are combined. Pour mixture into prepared pan and smooth out so it’s evenly distributed.
Bake in preheated oven for one hour and 30 minutes. When cool, cut into two-inch squares. Serve hot or at room temp.
