Diets I am always looking for a new vegetable side, because I usually get sick of the classics pretty quickly. This one is delicious! The edges of the cabbage get caramelized and crunchy.
1 head bug-free green cabbage
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons Gefen Maple Syrup
Preheat oven to 425 degrees Fahrenheit. Grease a baking sheet with nonstick cooking spray.
Remove outer layers of the cabbage and discard. Wash the cabbage and pat dry.
Carefully slice cabbage into “steaks” of about the same thickness and transfer the pieces to the prepared baking sheet, taking care that the layers remain intact.
In a small bowl, mix together olive oil, balsamic vinegar, and maple syrup. Drizzle over the cabbage.
Roast 20 minutes, until the edges of the cabbage get crispy and begin to caramelize.

I love cabbage and this looks like the sort of recipe I’d enjoy. What is “bug-free” cabbage, and where do I sign up to get some? Thanks.
Bug-free cabbage just means cabbage with out bugs in it. This is not a part of the recipe but for kashrus reasons. You don’t have to sign up to get any.
