Vegetarian/vegan sweet spicy curry. Caramelized onion, fresh tomatoes, garbanzo beans and walnuts curry seasoned with some spices. To add more flavor, I added garam masala and cinnamon for finishing. Serve with toasted bread or rice of your choice. Even if you are not vegan or vegetarian, you would enjoy this flavorful nutritious curry.
1 small yellow onion
2 medium Roma tomatoes
3 tablespoon brown sugar
2 tablespoons water
2 teaspoons grated fresh garlic
2 teaspoons grated fresh ginger
2 tablespoons curry powder
1/4 teaspoon ground cayenne pepper
2/3 cup cooked garbanzo beans (if you use canned beans, rinse and drain)
1/2 cup chopped walnuts
2 cups water
2 teaspoons Worcestershire sauce
1/4 teaspoon garam masala
1/4 teaspoon ground cinnamon
Chopped cilantro for garnish
Toasted bread or cooked rice of your choice, such as Naan or flat bread, jasmine rice, white or brown rice
Peel, cut onion into half, then slice onion. Chop tomatoes and remove seeds.
In a large pot, put 2 tablespoons water and brown sugar. Turn on the heat to medium. When it brings out nutty flavor and thickened, add garlic, ginger, curry powder and cayenne to the pot. Cook stirring constantly until garlic turns lightly brown. Add onions and cook stirring constantly for 5-6 minutes. Then add tomatoes to the pot and cook stirring constantly for another 3 minutes. Add garbanzo beans and walnuts to the pot and cook until well blended. Add 2 cups water and bring to a boil.
Reduce heat to medium-low, add Worcestershire sauce and simmer for about 15 minutes, stirring occasionally.
Add garam masala and cinnamon to the pot and keep simmering stirring occasionally for another 5 minutes.
Put the curry into each serving plate. Top with some cilantro for garnish and serve with toasted bread or rice of your choice.
