Prepare the Tartlets
Preheat oven to 350 degrees Fahrenheit.
Slice onions into half rings and caramelize in olive oil over medium heat until soft and translucent. Add salt and pepper to taste.
While that is cooking, cut puff pastry into 24 squares (if using a whole sheet). Score the inside to make another square and prick with a fork to allow the edges to puff up while baking. Stick prepared pastry into the oven for 10 minutes.
When ready, remove from oven and spread the herb goat cheese inside the square pocket. Top with the caramelized onions and put back into the oven at 425 degrees Fahrenheit for another nine minutes.
Meanwhile, cut the stems off the strawberries and slice to create a fan. Remove pastries from oven and let cool.
Once cooled, top with fanned strawberries and drizzle maple syrup or balsamic vinegar and enjoy!
