Pickled shredded carrots and daikon are a sharp condiment or salad. However you choose to serve it, it takes no time to put together and can be made well in advance.
2 medium carrots, shredded
1 daikon, shredded
1 medium onion, diced
1/2 teaspoon salt
2 tablespoons oil
Combine all ingredients.
Chill and serve.
