Diets I’m always looking for non-lettuce salads to complete my inevitable salad course. I love light, fresh, and simple, and this salad is all that. The cauliflower rice makes it all possible, and I love how it’s become so easy to eat healthy!
7 ounces (200-grams) Beleaves Frozen Riced Cauliflower, defrosted
1/2 cup chopped fresh parsley
2 plum tomatoes, chopped
1/4 cup pitted and chopped Tuscanini Kalamata Olives
2–3 scallions, chopped, or 1/2 red onion, finely chopped
zest and juice of 1 lemon
1 teaspoon salt
pinch of pepper
1/2 teaspoon Tonnelli Apple Cider Vinegar
1 tablespoon olive oil
1/2 teaspoon garlic
Place all ingredients in a bowl and toss to combine.
Best eaten right away or within a few hours of preparation. This salad won’t last for more than a day in the fridge.
