Enjoy this delicious salad alone or over greens.
1/4 cup to 1/3 cup Tuscanini Lemon Juice (start with less)
1 teaspoon Gefen Oregano
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
salt (or salt substitute) to taste
black pepper (to taste)
2 medium tomatoes, diced
1 medium red bell pepper, diced
1 medium green bell pepper, diced
1/2 cup red onion
1/4 cup Tuscanini Pitted Kalamata Olives
1 and 1/2 cups Beleaves Riced Cauliflower (the equivalent of 1/2 small head bug free cauliflower)
Combine the lemon juice, oregano, and garlic in the bottom of a mixing bowl. Season with salt substitute and pepper to taste.
Add the tomato, red pepper, green pepper, onion, olives, and cauliflower rice.
Toss and mix well to combine with the dressing. Adjust seasonings to taste.
Serve over mixed greens or enjoy on its own.
