I can’t say I relish all the peeling, pitting, and chopping that comes along with making a compote. Hence the beauty of this recipe: No peeling, no pitting, and very minimal chopping (or none at all if you choose to blend)! Just dump it all in the pot, simmer, and you’re done! Thanks to my good friend Yides for this one.

Directions

  1. Dice strawberries into small pieces. If they are frozen, best to defrost them for an hour or two so they cut easily (don’t defrost completely or they will be very mushy and difficult to cut neatly). Blended strawberries will taste just as good.

  2. Add the strawberries, cherries (with syrup), water, and sugar to a large pot. Bring to a boil, then reduce flame and simmer for 20 minutes.

  3. Leave to cool down completely. Once cool, mix in the vanilla extract and chill.

Variations:
To make this healthier and sugar free, use 500 grams of frozen cherries instead of the jars. Use two liters of water and exchange the sugar for 3/4 cup honey. Follow the instructions above.
