This healthy, easy dinner is the perfect way to toss a few things in your slow cooker and come home to a delicious fragrance and a hot, yummy supper. I used boneless chicken pieces so the ones who can’t stand finding a bone won’t complain, and the little ones who can’t use a knife yet don’t have to wait for you to slice their dinner for them. Keep the sodium content low so it’s suitable for young babies and toddlers. These are great textures for self-feeding to foster independence and good eating habits.
1 package chicken stew chunks, white or dark depending on your family’s preference, both work fine
1 15 ounce can tomato sauce (low sodium preferred, so you can control the salt levels)
1 cup diced butternut squash
1 15 ounce can of cannellini white beans
1/2 cup brown rice
1 cup water
Roasted Garlic and Herb grill seasoning (your choice of brand)
Put all ingredients in the slow cooker. Season generously and add water last. Cover and cook on medium for six hours. Enjoy!
