Chocolate-Cheese Blintzes

Ingredients

Crepes

Chocolate-Cheese Filling

  • 1/4 cup farmer cheese

  • 4 ounces whipped cream cheese

  • 1/4 cup sour cream

  • 1/3 cup sugar

  • 1 teaspoon vanilla extract

  • 2 tablespoons milk

  • 1 (3.5-ounce) bar of Geneve Milk Chocolate, melted with 2 tablespoons milk

Directions

Prepare the Crepes

1.

Using a hand blender, combine all ingredients and mix well until smooth and there are no lumps left. Refrigerate for one hour to set.

Grease a medium-sized frying pan (I used cooking spray) and heat the pan on medium heat. Add about 1/4 cup of the crepe batter and spread evenly in the pan.

3.

Flip it to the other side once the edges begin to dry and fry for another 30 seconds.

4.

Repeat the process with the rest of the batter.

Prepare the Filling

1.

Blend all the ingredients with a hand blender.

2.

Once the crepes are cooled off, you can start to fill them.

3.

Place a heaping tablespoon of filling in the center of the crepe and spread a bit to flatten.

4.

Fold the bottom of the crepe up over the filling. Fold both sides in towards the center and roll up tightly.

Garnish

1.

Garnish with melted chocolate and crushed Oreos.
