These granola bars are a delicious snack on Pesach. When my husband tried them, he said that I should start manufacturing them because he loved them so much.
2 and 1/2 cups nuts – I used mixed almonds and pecans
2 tablespoons chia seeds (the OU does not consider these to be kitniyot, but they may require special checking)
2 teaspoons cinnamon or pumpkin spice
2 tablespoons shredded coconut
1/4 teaspoon salt
1/2 cup pumpkin purée or mashed banana
2 tablespoons honey
1 teaspoon vanilla
2 tablespoons Haddar Almond Butter or other nut butter
1/2 cup dried cranberries
1/2 cup Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit.
Process nuts in food processor – do not over process, they should be coarse. Remove from processor and mix in chia seeds, cinnamon, coconut and salt.
In a separate bowl, combine pumpkin, honey, vanilla and nut butter.
Mix wet and dry ingredients well. Mix in cranberries and chocolate chips. Press down well into a parchment lined or well greased eight by eight or nine by nine pan.
Bake for about 30 minutes until edges start to brown.
Remove from oven and allow to cool for about five minutes (they will fall apart if sliced too quickly but will harden too much if you wait too long). Slice into bars and allow to fully cool prior to serving.
