Diets This is a delicious salsa using ingredients I had on hand in my fridge! It’s a chunky salsa and it’s the perfect balance of sweet and heat. It’s delicious as part of a nacho board or any other occasion you want to serve chips and dips.
1 large Spanish onion, cut into chunks
4 plum tomatoes, cut into chunks
1 bell red pepper, cut into strips
1 jalapeno pepper, seeded and cut in half
1/4 cup Gefen Olive Oil
2 tablespoons Manischewitz Kosher Salt
2 cubes Gefen Frozen Garlic
juice of 1 lime
Preheat oven to 400 degrees Fahrenheit.
On a baking sheet, mix all the ingredients besides the lime. Place in preheated oven and bake for one hour. Remove from oven, transfer to a bowl, and add the lime juice.
Using a large spoon, mix the salsa well, allowing it to break apart.
