Diets Once again the beauty of cookies is brought out with this recipe. You can have the taste of cinnamon buns, yes, even with the icing- but in a single serving (and a LOT fewer calories). I love when my self control issue is removed from the picture.
Yield: 4 dozen cookies
2 sticks margarine
1/3 cup sugar
3/4 cup icing sugar
1/2 teaspoon salt
1 teaspoon Gefen Pure Vanilla Extract
1 egg
2 and 1/4 cups flour
2/3 stick margarine
1/4 cup light brown sugar
1 and 1/2 teaspoons light corn syrup
1 tablespoon cinnamon
2 tablespoons flour
1/2 teaspoon Gefen Pure Vanilla Extract
1/2 cup icing sugar
2 tablespoons light corn syrup
1 teaspoon Gefen Pure Vanilla Extract
1 teaspoon water
In the bowl of a mixer, cream margarine, sugars, salt and vanilla until light and fluffy. Add the egg and mix until fully incorporated. With your mixer on low speed, slowly add flour, just until combined.
Dust a sheet of baking paper with flour and roll out the dough with another sheet of baking paper on top. (this method makes rolling out sticky dough’s, much easier). You should be able to roll it to approx. 12-inch square.
Melt margarine and combine the rest of ingredients well.
Spread the filling all over your square of dough and roll up the dough – jelly roll style.
Wrap the log in plastic wrap and freeze until firm. Approximately 15 to 20 minutes.
Preheat oven to 375 degrees Fahrenheit.
When dough is firm, slice into 1/4-inch slices and lay flat on lined cookie sheets. Leave one and 1/2 inches between cookies.
Bake until golden, 12 to 14 minutes.
Allow cookies to cool. Prepare icing – combine all ingredients in a bowl. Lightly smear the icing over the tops of the cookies.
