Soda is a wonderful tenderizer, which is why this brisket comes out so incredibly soft every time. This recipe is so simple and easy to make, and it yields great results. This is sure to become a family favorite brisket recipe, you won’t be sorry you tried it!
3 onions
4 and 1/2 – 5 pounds beef brisket
4 cloves garlic, crushed or 4 cubes Gefen Frozen Garlic
salt, to taste
pepper, to taste
1 teaspoon dried basil or 1 cube Gefen Frozen Basil
1 tablespoon paprika
1/4 cup Tuscanini Apricot Jam
2 tablespoons lemon juice
1 cup Tuscanini Sparkling Cola (or kosher for Passover cola)
Spray a large roasting pan. Place onions in the pan and brisket on top of them.
Combine the garlic, seasonings, jam and lemon juice, and rub onto the brisket. Pour cola over the brisket.
Marinate for one hour at room temperature, or overnight in fridge.
Preheat oven to 325 degrees Fahrenheit.
Cook covered, allowing 45 minutes per pound of meat, basting occasionally. Uncover for last half hour.
Cool completely and refrigerate overnight before serving.
