2 tablespoons oil
1 large onion, chopped
2 plum tomatoes, chopped
1 zucchini, peeled and chopped
1 pound (454 grams) mushrooms, sliced
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
3 tablespoons onion soup mix
1 clove garlic, crushed, or 1 cube Gefen Frozen Garlic
1 package Gefen Israeli Couscous
2 and 1/4 cups boiling water
Preheat oven to 350°F (180°C).
Heat oil in a large frying pan over medium heat. Sauté onion until soft and golden.
Add remaining vegetables and continue sautéing until soft.
Place vegetables, seasonings, couscous, and boiling water in a 9- x 13-inch pan. Stir.
Cover and bake for one hour.

So delicious but i found that it makes more like 6-8 servings
delicious and easy ! made with whole weat couscous ..
