Colorful Vegetable Couscous

  • 2 tablespoons oil

  • 1 large onion, chopped

  • 2 plum tomatoes, chopped

  • 1 zucchini, peeled and chopped

  • 1 pound (454 grams) mushrooms, sliced

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

Directions

Make the Couscous

1.

Preheat oven to 350°F (180°C).

2.

Heat oil in a large frying pan over medium heat. Sauté onion until soft and golden.

3.

Add remaining vegetables and continue sautéing until soft.

4.

Place vegetables, seasonings, couscous, and boiling water in a 9- x 13-inch pan.  Stir.

5.

Cover and bake for one hour.

Tips:

This recipe can be frozen.  For best results, sauté vegetables, combine with spices, and freeze.  On Yom Tov, just add the couscous and boiling water and bake fresh.
