This salad is an all-time winner! Make sure to make enough for doubles—the tangy flavor will keep everyone crunching.
1 onion, sliced in thin half rings
oil, for frying
8 ounces purple cabbage
8 slices turkey cold cuts, cubed
1/4 cup pomegranate seeds
1/4 cup chopped scallions
1/4 cup brown sugar
2 tablespoons vinegar
2 tablespoons oil
1 tablespoon Gefen Ketchup
In a large skillet, heat 1/4 inch oil. Drop in onion slices and let sizzle until edges are brown. Remove with a slotted spoon and drain.
In a container, combine dressing ingredients. Shake well.
Place all salad ingredients in a serving bowl. Stir in the dressing and serve.
