Ingredients

Crunchy Red Cabbage Salad

  • 4 cups shredded purple cabbage

  • 1/2 cup diced celery

  • 1/2 cup diced onion

  • 1/2 cup diced sour pickles

  • 1/2 cup vegan mayonnaise

  • 2 tablespoon Gefen Maple Syrup

  • 2 teaspoons dijon mustard

  • salt, to taste

  • pepper, to taste

  • garlic powder, to taste

  • optional topping- toasted pumpkin seeds

Directions

Prepare the Crunchy Purple Cabbage Salad

1.

Combine all ingredients except seasonings in a bowl in no specific order.

Mix really well.

3.

Add salt, pepper, and garlic to taste.

4.

I personally like storing it in the fridge for a couple of hours to let the flavors seep in. You can also eat it right away. Either way, it tastes delicious.

5.

Add your favorite crunchy seeds or nuts as a topping right before serving.

Delicious! A perfect blend of flavors! Everyone loved it down to my 2 year old!
