Ingredients

Crispy Air Fryer Plantain Latkes

  • 2 green plantains (unripe = crispier)

  • 1 egg

  • 2–3 tablespoons Glicks Flour

  • 1/2 teaspoon salt

  • oil spray

Directions

1.

Peel and grate the green plantains. Place in a towel and squeeze out as much liquid as possible.

2.

Mix with egg, flour, and salt until you get a cohesive dough (add one tablespoon flour if too wet).

3.

Shape thin discs. Preheat air fryer to 400 degrees Fahrenheit. Spray the basket and the tops of the latkes.

4.

Air-fry 10–14 minutes, flipping halfway, until golden and crisp. Add two to three more minutes for extra crunch.

Tips:

Use green plantains only.

Remove as much moisture as possible.

Don’t overcrowd the basket.

Serve warm for best crunch.

Topping ideas: sour cream, applesauce, spicy honey, tahini, or avocado mash
