Diets This is a recipe we make every year during Chanukah. Traditionally we deep-fry our plantain latkes, but over the years I started making a lighter version… and the air-fried ones are just as golden, crispy, and delicious, without all the oil. Yields 6–8 latkes
2 green plantains (unripe = crispier)
1 egg
2–3 tablespoons Glicks Flour
1/2 teaspoon salt
oil spray
Peel and grate the green plantains. Place in a towel and squeeze out as much liquid as possible.
Mix with egg, flour, and salt until you get a cohesive dough (add one tablespoon flour if too wet).
Shape thin discs. Preheat air fryer to 400 degrees Fahrenheit. Spray the basket and the tops of the latkes.
Air-fry 10–14 minutes, flipping halfway, until golden and crisp. Add two to three more minutes for extra crunch.
